  • 1/8 cup brown sugar
  • 10 tablespoons unsalted butter (melted)
  • 2 cups apple cider (reduced to 1/2 cup)
  • 24 oz cream cheese (room temperature)
  • 3/4 cup white granulated sugar
  • 1/2 cup sour cream (room temperature)
  • 4 large eggs (room temperature)
  • 1/4 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, brown sugar, and melted butter. Press into the bottom of a springform pan. Bake for 10 minutes and let cool.
  2. In a saucepan, boil apple cider until reduced to about 1/2 cup.
  3. In a large bowl, beat cream cheese with white sugar until smooth. Gradually add sour cream, vanilla extract, and eggs. Mix in reduced apple cider, brown sugar, flour, and cinnamon until just combined.
  4. Pour filling over cooled crust and bake for about 80 minutes or until slightly jiggly in the center. Cool in the oven with the door ajar for an hour.
  5. Combine melted butter with apple cider; drizzle over cheesecake and sprinkle with cinnamon sugar. Chill for at least four hours before serving.
