  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine salt
  • ½ cup (113 g) unsalted butter, at room temperature
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely chopped
  • ¼ cup (50 g) granulated sugar for rolling
  • 1 teaspoon ground cinnamon for rolling

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cream of tartar, ground cinnamon, and fine salt until well combined.
  3. In a large bowl, beat unsalted butter with granulated sugar and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract; mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Gently fold in the chopped apples until evenly distributed throughout the dough.
  7. In a small bowl, mix granulated sugar and ground cinnamon for rolling.
  8. Roll tablespoon-sized portions of dough into balls and coat in the cinnamon-sugar mixture.
  9. Place on the baking sheet about 2 inches apart and bake for 8–10 minutes until golden around the edges.
  10. Allow cookies to cool on the baking sheet before transferring them to a wire rack.
