  • ½ cup unsalted butter (room temperature)
  • ¾ cup granulated sugar
  • 2 large egg whites (room temperature)
  • 2 tbsp canola oil
  • ⅓ cup milk (room temperature)
  • 1 tsp vanilla extract
  • ¼ cup rainbow sprinkles
  • For frosting: 1 stick unsalted butter, powdered sugar, vanilla extract, milk

Instructions

  1. Preheat the oven to 350°F (175°C) and ensure mason jars are clean.
  2. In a bowl, whisk together flour, cornstarch, salt, and baking powder until combined.
  3. In another bowl, beat the butter and sugar until light and fluffy.
  4. Add egg whites, canola oil, milk, and vanilla to the butter mixture; mix well.
  5. Gradually add dry ingredients to wet ingredients until just combined. Fold in sprinkles.
  6. Pour batter into mason jars until half full; bake on a tray for about 15 minutes or until a toothpick comes out clean.
  7. For frosting: Beat butter until creamy; gradually mix in powdered sugar, vanilla, and milk until smooth.
  8. Once cooled, frost each jar cake and top with extra sprinkles.
