Ingredients

Scale
  • 1 cup unsalted butter, cubed
  • 1⅓ cups semisweet chocolate chips, divided
  • ¾ cup Dutch-processed cocoa powder
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs, room temperature
  • 1 yolk, room temperature
  • 1 tablespoon brewed coffee
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon hot water, plus more if needed
  • 2 (8-ounce) blocks cream cheese, room temperature
  • ½ cup granulated sugar
  • 1 pinch salt
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare a 9-inch square baking pan with parchment paper.
  2. Melt butter and 1 cup chocolate chips in a microwave-safe bowl, stirring until smooth. Whisk in cocoa powder, sugars, eggs, coffee, and vanilla.
  3. Fold in flour and salt until just combined, reserving ½ cup of batter. Spread the remaining batter into the prepared pan; sprinkle with extra chocolate chips.
  4. Bake for 20 to 30 minutes based on desired fudginess.
  5. Prepare the cheesecake topping by beating cream cheese, sugar, salt, eggs, and vanilla until smooth.
  6. Pour cheesecake mixture over partially baked brownies and dollop reserved brownie batter on top; swirl gently.
  7. Bake for an additional 30 to 35 minutes until edges are puffed and center wobbles slightly.
  8. Cool completely before slicing.
