  • 4 cups butternut squash (1 large)
  • 4 cloves garlic
  • 1/4 cup sweet onion
  • 16 ounces vegetable broth
  • 1 cup orzo
  • 1 cup mozzarella cheese
  • 1/2 cup parmesan cheese
  • Fresh thyme and sage for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Toss butternut squash with 2 tablespoons olive oil, salt, and pepper. Roast for 25-30 minutes until tender.
  2. In a large pot, bring vegetable broth to a boil. Add orzo and cook for about 10 minutes until tender.
  3. In a skillet, heat remaining olive oil over medium heat. Sauté onion and garlic until fragrant, then add half of the sage leaves, mozzarella, cream, and parmesan. Whisk until thickened.
  4. Combine cooked orzo and roasted squash into the cheese sauce mixture.
  5. Garnish with fresh herbs and serve hot.
