  • 2 tablespoons instant espresso powder (or finely ground coffee)
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 3 large eggs
  • ¼ cup melted butter, cooled slightly
  • 1 teaspoon vanilla extract
  • ½ cup mini chocolate chips
  • Optional: ¼ cup chopped dark chocolate, coarse sugar for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, sugar, cocoa powder, espresso powder, baking powder, and salt.
  3. In another bowl, beat eggs until frothy; mix in melted butter and vanilla extract.
  4. Gradually fold dry ingredients into wet mixture until just combined; fold in chocolate chips.
  5. Divide dough in half; shape each portion into logs on the baking sheet. Brush with egg wash and sprinkle with coarse sugar if desired.
  6. Bake for 25-30 minutes until firm and slightly cracked on top. Cool for 15 minutes, then slice diagonally into ¾-inch thick pieces.
  7. Place slices cut-side down on the baking sheet; bake for another 15-20 minutes until crisp.
