  • 2 pounds beef chuck roast (cut into 2-inch chunks)
  • 1 teaspoon kosher salt
  • ½ teaspoon coarsely ground black pepper
  • 2 tablespoons gluten-free all-purpose flour
  • 2 tablespoons olive oil
  • ½ yellow onion (chopped large)
  • 4 garlic cloves (minced)
  • 1 large carrot (cut into 2-inch chunks)
  • 2 Yukon Gold potatoes (diced into 2-inch pieces)
  • 2 cups beef broth
  • ¼ cup tomato paste
  • 1 bay leaf
  • 2 teaspoons fresh thyme leaves

Instructions

  1. Preheat the oven to 325°F.
  2. Season the beef with salt and pepper and coat with flour.
  3. Heat olive oil in a Dutch oven and brown the beef in batches for about 3–4 minutes. Set aside.
  4. Sauté onion, garlic, and carrot in the same pot for about 2–3 minutes until lightly browned.
  5. Add diced potatoes, broth, tomato paste, bay leaf, and thyme. Stir well.
  6. Return browned beef to the pot; bring to a simmer.
  7. Cover and transfer to the oven; cook for 2–2.5 hours until beef is tender.
