Scale
  • 3 lbs beef chuck, cut into 2-inch pieces
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 lb mushrooms, quartered
  • 1/4 cup all-purpose flour
  • 3 tablespoons olive oil
  • Bouquet garni (thyme, bay leaves, parsley)
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients: Cut beef into pieces, chop onion, slice carrots, mince garlic, and quarter mushrooms.
  2. Brown the beef: Heat olive oil in a large pot over medium heat. Season beef with salt and pepper. Brown in batches for about 5 minutes per side. Remove and set aside.
  3. Sauté vegetables: In the same pot, add onion, carrots, and garlic. Cook until onions are translucent (4-5 minutes).
  4. Add flour: Sprinkle flour over the vegetables and stir to coat evenly.
  5. Combine ingredients: Return browned beef to the pot along with tomato paste and bouquet garni. Pour in beef broth and bring to a boil.
  6. Simmer stew: Reduce heat to low, cover tightly, and let simmer for about 2 hours.
  7. Cook mushrooms: In a separate pan, sauté quartered mushrooms in oil until golden brown (about 5 minutes). Add to stew during the last 30 minutes of cooking.
