  • ½ cup grated Parmesan cheese
  • 1 cup heavy cream (or whole milk)
  • ½ cup beef broth (or vegetable broth for vegetarian version)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • 1 tablespoon butter (for greasing)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • Fresh thyme sprigs (for garnish)
  • Extra Parmesan cheese (for garnish)
  • Crispy fried onions (optional, for garnish)

Instructions

  1. In a skillet over medium heat, melt butter and olive oil. Add sliced onions, salt, and pepper; cook for 20-30 minutes until caramelized.
  2. Slice Yukon Gold potatoes into ¼-inch rounds. Grease a baking dish with butter.
  3. Layer half of the potato slices in the dish, followed by half the caramelized onions and half the shredded cheese. Repeat layers.
  4. In a bowl, mix cream (or milk), additional salt, black pepper, and fresh thyme; pour over layered ingredients.
  5. Preheat oven to 350°F (175°C). Cover with foil and bake for 45 minutes; remove foil and bake for another 15-20 minutes until golden brown.
  6. Let sit for 10 minutes before serving; garnish with thyme sprigs and extra Parmesan.
