  • 1 boneless chicken breast
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Juice of lemon (optional)
  • 1 cup jasmine or basmati rice
  • 1 cup water
  • Pinch of salt
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice or vinegar
  • Salt & black pepper
  • Optional: fresh parsley or mint

Instructions

  1. Rinse rice until water runs clear. Combine with water and a pinch of salt in a pot. Bring to boil, then simmer covered for about 15 minutes until fluffy.
  2. Rub chicken with olive oil, smoked paprika, garlic powder, salt, and pepper. Grill on medium heat for 5-6 minutes per side until cooked through (165°F internal).
  3. In a bowl, mix halved cherry tomatoes and diced cucumber with olive oil, lemon juice (or vinegar), salt, and pepper.
  4. Serve grilled chicken slices alongside fluffy rice and salad.
