  • 1 can (20 oz) crushed pineapple (with juice)
  • ½ cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp pineapple juice (reserved from the can)
  • ½ cup chopped pecans (optional)
  • ½ cup shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, baking soda, and salt. Stir in eggs, vanilla extract, and crushed pineapple with juice until well blended. Optionally fold in pecans and coconut.
  3. Divide the batter between prepared pans and bake for 30-35 minutes until a toothpick inserted comes out clean. Cool in pans for about 10 minutes before transferring to wire racks.
  4. For frosting: Beat softened cream cheese and butter until creamy. Gradually mix in powdered sugar and add vanilla extract with reserved pineapple juice until smooth.
  5. Assemble the cake by layering with frosting between cakes and covering the top and sides.
