  • 4 cloves garlic (smashed)

  • 1 teaspoon dried thyme
  • Fresh mint leaves (1/2 cup, finely chopped)
  • Flat-leaf parsley (1/4 cup, finely chopped)
  • Lemon zest

Instructions

  1. Season the lamb generously with salt and black pepper. Heat olive oil in a Dutch oven over medium-high heat and sear the lamb until browned on all sides.
