  • 1 cup granulated sugar (or coconut sugar)
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 vanilla bean (or 1 teaspoon vanilla extract)
  • 1 cinnamon stick
  • 23 fresh thyme sprigs

Instructions

  1. Rinse figs under cool water and pat dry. Quarter each fig.
  2. In a heavy-bottomed saucepan, combine figs, sugar, lemon juice, and lemon zest. Let sit for 5-10 minutes to release juices.
  3. Heat the mixture over medium heat until it reaches a gentle boil, then add the vanilla bean and cinnamon stick.
  4. Reduce heat to medium-low and simmer for 20-25 minutes, stirring every 5 minutes until thickened.
  5. Remove spices, blend for texture if desired, taste for sweetness, and adjust if necessary.
  6. Transfer hot jam into sterilized jars, seal, and cool before refrigerating.
