  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon black pepper
  • 1/2 teaspoon red chili flakes (optional)
  • 1 teaspoon garlic powder
  • 1 pound boneless, skinless chicken breasts or thighs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil or vegetable oil
  • 12 ounces penne or rigatoni pasta
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 1/2 cup chopped bell peppers
  • 1/2 cup fresh spinach leaves
  • 1/4 cup chopped parsley

Instructions

  1. In a mixing bowl, combine honey, soy sauce, apple cider vinegar, black pepper, chili flakes, and garlic powder. Add the chicken to the bowl; coat well with marinade. Let it marinate for about 10-15 minutes.
  2. Bring a large pot of salted water to a boil. Add the penne or rigatoni pasta and cook according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, add olive oil. Remove chicken from marinade (reserve marinade) and dredge in flour mixed with paprika, salt, and black pepper. Sear chicken until golden brown and cooked through (about 5-7 minutes per side). Remove from skillet and let rest before slicing into strips.
  4. In the same skillet, add butter and sauté minced garlic until fragrant. Pour in reserved marinade along with heavy cream and chicken broth; stir well and bring to a simmer.
  5. Add cooked pasta to the skillet along with bell peppers and spinach. Toss everything together until well-coated in sauce. Stir in sliced chicken and Parmesan cheese. Season with salt and pepper as needed.
  6. Garnish with chopped parsley before serving.
