  • 4 lamb shanks
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 6 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups apple vinegar
  • 2 cups beef or lamb stock
  • 2 bay leaves
  • Fresh rosemary sprigs
  • Fresh thyme sprigs

Instructions

  1. Season the lamb shanks with salt and pepper. In a Dutch oven over medium-high heat, add olive oil and brown the shanks for about 4-5 minutes on each side.
  2. Remove the shanks and sauté the onion, carrots, celery, and garlic in the same pot for 5-7 minutes until softened.
  3. Stir in tomato paste, then deglaze with apple vinegar and stock.
  4. Return lamb shanks to the pot along with bay leaves and herbs. Bring to a simmer; cover tightly.
  5. Choose your cooking method: braise in the oven at 325°F (163°C) for 2-3 hours, slow cook on low for 6-8 hours, or pressure cook for about 45 minutes until tender.
