  • 1 grilled chicken breast, sliced
  • 2 jammy eggs, boiled for 7 minutes, peeled and halved
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1 cup kalamata olives
  • 2 tbsp crumbled feta cheese (optional)
  • 1 cup mixed greens or romaine lettuce
  • 1 tbsp olive oil (for dressing)
  • 1 tsp lemon juice or apple vinegar (for dressing)
  • Salt & cracked pepper to taste

Instructions

  1. Grill or pan-sear the chicken breast until fully cooked (about 4-5 minutes per side). Let it rest before slicing.
  2. Boil eggs for exactly 7 minutes, then transfer them to an ice bath to cool. Peel and halve them.
  3. In a large bowl, layer mixed greens as the base. Arrange sliced avocado, chopped cucumber, halved cherry tomatoes, kalamata olives, sliced chicken, and jammy eggs on top.
  4. Drizzle olive oil and lemon juice (or vinegar) over the salad, add salt and pepper to taste. Toss gently if desired and serve immediately.
