  • 2 cups finely shredded sharp cheddar cheese
  • 3034 Ritz crackers, crushed
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon smoked paprika or cayenne
  • 2 tablespoons finely chopped chives or green onions
  • 1½ cups Cheez-It crackers, finely crushed
  • 2 small celery stalks, cut into tiny 'pumpkin stems'
  • Fresh parsley leaves (for garnish)

Instructions

  1. In a large bowl, combine softened cream cheese and shredded cheddar until smooth. Mix in crushed Ritz crackers and optional flavorings like mustard and spices.
  2. Chill the mixture for 30–60 minutes until slightly firm.
  3. Roll the chilled mixture into 1.5-inch balls and coat each in crushed Cheez-It crumbs.
  4. Use a toothpick to create vertical grooves on each ball for pumpkin ridges.
  5. Insert a small piece of celery into the top of each pumpkin as a stem and garnish with parsley.
