- 1 cup apple cider (preferably spiced)
- ¾ cup pumpkin purée
- 2 tbsp maple syrup (or to taste)
- ½ tsp cinnamon
- ½ tsp pumpkin pie spice
- ½ tsp vanilla extract
- Pinch of salt
- In a bowl, combine apple cider, 1 tablespoon of maple syrup, and cinnamon until well blended.
- In another bowl, whisk together pumpkin purée, remaining maple syrup, pumpkin pie spice, vanilla extract, and salt until smooth.
- Alternate spooning the cider mixture and pumpkin mixture into popsicle molds. Use a knife or skewer to gently swirl them together.
- Insert sticks into each mold and freeze for at least 4–6 hours until solid.
- To release popsicles, run warm water over the outside of the molds briefly.
