  • 8 slices of soft sandwich bread (white or brioche)
  • 8 cooked breakfast sausages (beef or chicken)
  • 3 large eggs
  • ½ cup milk (whole or 2%)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 tablespoons sugar (optional)
  • 2 tablespoons butter (for frying)

Instructions

  1. Trim crusts off the bread slices and flatten each slice with a rolling pin.
  2. Place one sausage at the edge of each flattened slice and roll up tightly, pressing the edge to seal.
  3. In a shallow bowl, whisk together eggs, milk, vanilla, cinnamon, and sugar.
  4. Heat a non-stick skillet over medium heat and add butter.
  5. Dip each roll-up into the egg mixture, coating all sides, then place seam-side down in the skillet.
  6. Cook for 2–3 minutes per side until golden brown.
  7. Dust with powdered sugar or drizzle with maple syrup before serving.
