  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp chili powder (optional)
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup beef broth
  • 1 tbsp tomato paste
  • Salt and pepper to taste
  • 2 tbsp oil (for browning)

Instructions

  1. Prepare all ingredients: dice the onion, mince the garlic, and cube the beef.
  2. In a large skillet over medium heat, add oil and brown the cubed beef in batches. Transfer to the slow cooker.
  3. Sauté onions in the same skillet until translucent; add garlic and ginger until fragrant.
  4. Combine sautéed onions and garlic with browned beef in the slow cooker. Add spices, coconut milk, diced tomatoes, broth, salt, and pepper. Stir well.
  5. Set the slow cooker on low heat and cook for 6-8 hours until beef is tender.
  6. Prepare garlic naan while the curry cooks.
  7. Serve hot alongside warm garlic naan.
