  • pounds chicken breasts or thighs
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 2 tablespoons tomato paste
  • 2 teaspoons Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • 2 cups small pasta (like ditalini or rotini)
  • Fresh basil or parsley, for garnish
  • ½ cup grated Parmesan cheese, freshly grated
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare ingredients by dicing the onion and mincing the garlic.
  2. In your slow cooker, layer chicken at the bottom followed by onion, garlic, crushed tomatoes, chicken broth, tomato paste, Italian seasoning, and optional red pepper flakes.
