  • 3 tablespoons pumpkin purée
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste

Instructions

  1. Boil the eggs in a saucepan covered with water. Bring to a boil, then cover and remove from heat for 12 minutes. Transfer to ice water until chilled, then peel.
  2. Slice each egg in half lengthwise, removing yolks into a mixing bowl. Mash yolks and mix in pumpkin purée, mayonnaise, Dijon mustard, smoked paprika, cayenne pepper, salt, and black pepper until smooth.
  3. Fill egg whites with the mixture using a spoon or piping bag.
  4. Garnish with smoked paprika, chives, or pumpkin seeds as desired. Chill for at least 30 minutes before serving.
