  • 450g flank or sirloin steak
  • 1½ cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tbsp olive oil (for steak)
  • 2 cups broth or water (for rice)
  • 1 cup long-grain white rice
  • Salt and pepper, to taste
  • Fresh cilantro, lime wedges, avocado slices, and sliced jalapeños for garnish

Instructions

  1. Pat the steak dry and rub with olive oil and spices (paprika, cumin, garlic powder, salt, and pepper).
  2. Heat a large skillet until hot and sear the steak for 4–5 minutes on each side based on thickness.
  3. Remove the steak and let it rest before slicing thinly against the grain.
  4. Rinse the rice under cold water. In a pot, heat olive oil, toast the rice lightly, then add broth or water. Bring to a boil, cover, and simmer for 18–20 minutes.
  5. In the same skillet used for the steak, melt butter over medium heat. Add garlic and cook until fragrant. Pour in milk and bring to a gentle simmer.
  6. Gradually stir in shredded cheeses until smooth. Season with cumin, chili powder, salt, and pepper.
  7. To serve, spoon rice onto plates, top with sliced steak, ladle warm queso sauce over everything, and add desired garnishes.
