  • 1 lb beef tenderloin or beef shoulder, thinly sliced
  • 1 tablespoon cornstarch
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups bok choy, chopped (separate white stems and green leaves)

Instructions

  1. In a bowl, combine thinly sliced beef with cornstarch, soy sauce, oyster sauce, and sesame oil. Mix well and let sit for about 10 minutes.
  2. Heat vegetable oil over medium-high heat until shimmering.
  3. Add the marinated beef to the hot wok in a single layer. Stir-fry for about 3-4 minutes until browned and just cooked through, then remove from the wok and set aside.
  4. In the same wok, add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
  5. Add chopped bok choy stems first; stir-fry for about 2 minutes, then add bok choy leaves and cook until wilted.
  6. Return cooked beef to the wok with bok choy and toss everything together for another minute to heat through.
