  • 113 g unsalted butter
  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour (sifted)
  • A pinch of salt
  • 1/2 tsp vanilla extract
  • 2 shots (or 2 tbsp) espresso or instant coffee
  • 250 g mascarpone cheese (room temperature)
  • 240 ml heavy cream
  • 50 g sugar (for topping)
  • 1/4 tsp salt (for topping)
  • 1/2 tsp vanilla extract (for topping)
  • 2 tbsp espresso powder (for topping)
  • Cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8 or 9-inch square baking tin with parchment paper.
  2. In a microwave-safe bowl, combine chopped dark chocolate and unsalted butter. Heat in intervals until melted, stirring between each interval.
  3. Mix brown and granulated sugars into the melted chocolate until combined.
  4. Add eggs one at a time, whisking after each addition until fully incorporated.
  5. Sift in all-purpose flour and salt, folding gently until just combined.
  6. Pour batter into the prepared tin and smooth the top. Bake for 25–30 minutes, or until a toothpick comes out with moist crumbs.
  7. Once baked, poke holes in the brownies and pour espresso over them as they cool.
